Pancake Day! It’s that time of year again when you’re allowed to eat pancakes for breakfast, lunch and dinner!

You know we are all about outdoor living and making the most of your outdoor space throughout the year so why not try pancakes on the barbecue this year. Despite our North American roots we’ve opted for the English style of pancakes
Ingredients:
- 100g of plain flour
- 2 eggs
- 300ml of milk
- 1 tablespoon of oil for cooking
- pinch of salt
Put the flour, eggs, milk and a pinch of salt into a bowl or large jug, then whisk to a smooth batter. If you have time rest the batter for 30 mins; a little time to select your favourite toppings!
This recipe works best on a barbecue with a built in griddle but if you don’t have this don’t worry you can use a cast iron frying pan or a baking tray.

- Add a drop of oil to the frying pan or griddle and pour enough of the mixture for one pancake (approx 1 cup)
- Fry both sides until even golden brown patches appear
- Serve on a plate, add you favourite toppings
For a little something special and as an alternative to the traditional lemon and sugar why not trying grilling some fruit on the barbecue or add some Canadian maple syrup!
